Homemade Sugar Substitute

Since being introduced to Trim Healthy Mama, I've completely gotten off of white sugar.  At first, I used the store-bought green stuff from my local grocery store, but the cost soon became prohibitive as I began to use it more and more, especially when baking.  Then I heard you could buy stevia and erithrytol or xylitol in bulk and make it yourself at  home.  This also made a 'cleaner' version because it was just 2-3 ingredients.  I experimented with several recipes I found online and finally settled on my favorite.  To me, xylitol just mimics sugar better than erithrytol.
I will note that I try to only by birch xylitol vs corn xylitol and products produced in the USA versus china.  Sometimes it's harder to find or more expensive but it is worth it.  And speaking of cost, don't let the price of stevia extract reluctant to give it a try.  This stuff is potent!  I've had my container for over a year and it is still half-full.


“Better Than the Green Stuff” Sugar Substitute
Makes 1 cup

Ingredients
1 cup birch xylitol
1/2 tsp stevia extract powder

Directions
1.  Combine ingredients. 

2.  Store in a container with a tight-fitting lid.  I use an old Truvia container for my tabletop batch and it fits perfectly. 

Use as a 1:1 replacement for sugar in baking and otherwise.  If I’m feeling very industrious or I’m making something, like skinny chocolate, and I want to reduce grit, I will run a batch through a clean coffee grinder.  It makes ‘powdered sugar’ beautifully.
